Memorial Day is around the corner, so we asked HBK Incubates member Upicnic for their go-to summer recipe. Quick and easy to assemble, bright with lemon juice and zest, and crunchy with diced fennel and toasted almonds, these sandwiches are sure to become a picnic favorite. Make sure to use sturdy burger buns (or hot dog rolls) with a soft interior to soak up all the goodness.
Chicken Salad Sandwiches
Ingredients
Makes approximately four sandwiches
¼ cup mayo
1 small lemon, juice and zest
2 cups of cooked chicken, cut in bite-size pieces
½ cup fennel, diced
1 medium shallot, diced
¾ cup sliced almonds, toasted
Salt and pepper to taste
Arugula to garnish
4 Hot Bread Kitchen burger buns or hot dog rolls, lightly toasted
Mix all ingredients together and scoop approximately 1/2 cup portions onto buns. Garnish with arugula if you like, and secure top bun with toothpick. Enjoy outside!
