Together with the Momofuku team, we’re proud to offer a variety of breads to the new Fuku concept. Moroccan M’smen is offered with the Chimek fried chicken meal (below), and we also developed a Bing bun, which is the perfect bun to complement Fuku’s signature spice, sauce and crunch. The initial inspiration came from bing, a chewy, yeasted flatbread from China. After extensive research and development, we dug deep into our bakery’s global repertoire of bread doughs and landed on barbari dough, which has the perfect balance of soft, tender dough and crusty exterior to sop-up Fuku’s umami-filled sauces.
